Why do guys on dating apps often just first message "hey" or "hey how are you" instead of being more creative and unique? How do they think being a copycat will stand out?

Because it's a standard phrase to start communication.
That's not an interview for a stand-up artist.
It's one of the reason why pickup trainings suck.

Of course, farther on when you start chatting moreover dating being smart and creative will really impress, but only as a SUPPLEMENT to attractive look.
BTW all the girls start their messages with a similar simple greeting.
If she is not creative in her messages, no guy would care either.
People choose a partner by sexual attractiveness in the first place.
If a hot girl pays attention to me it doesn't really matter what she says. Her attention is enough.
